Orange Yogurt Cake

I was craving for a cake with a hint of orange fragrance and what else could be better than a yogurt cake? I used a different recipe from the two previous yogurt cakes and loved it just as much. ;)

Orange Yogurt Cake
Recipe adapted from Wen's Delight and modified by The Bakeanista

Ingredients:
(A)
250g butter
160g sugar
5 egg yolks
2 tbsp orange rind
2 tbsp orange juice
250g honey-flavoured low fat yogurt
250g plain flour
2 tsp baking powder
120g dried cranberries

(B)
5 egg whites
40g sugar
1/4 tsp cream of tartar

Method:
1) Preheat oven at 150 deg'C. Grease lightly a 9-inch round springform cake pan.

2) Cream butter & sugar till light and fluffy.

3) Add in egg yolks and mix well.

4) Add in orange rind and juice.

5) Sift flour with baking powder, then stir into mixture alternately with yogurt in three separate folds. Stir in dried cranberries and mix well.

6) Whisk egg whites till foamy, then add in cream of tartar and sugar. Continue to whisk till stiff.

7) Fold in half of the meringue into the butter mixture until well incorporated. Pour mixture into the remaining meringue and continue to fold until well-combined.

8) Pour into prepared pan and bake for 1 hour until golden brown.

It was as light as a chiffon and as moist as a butter cake. When it first came out of the oven, it also has a crisp texture on the top layer. :D
