Craisie Berry Oatmeals
Recipe adapted from Baking Bites and modified by The Bakeanista
Ingredients
(A)
240g butter, room temperature
220g sugar
200g brown sugar
2 large eggs
2 tsp vanilla extract
(B)
300g plain flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
(C)
230g quick oatmeal (not instant!)
180g dried cranberries (or raisins)
Method
1) Preheat the oven to 180 degrees Celcius. Line a baking sheet with parchment paper.
2) In a large bowl, cream together butter and sugar until mixture is light. Beat in the eggs one at a time, followed by the vanilla extract.
3) In a medium bowl, sift and whisk together all ingredients from (B).
4) Gradually blend in flour mixture (3) into butter mixture (2). Stir in oats and dried cranberries.
5) Drop 1-inch balls of dough onto the cookie sheet, placing them about 1 1/2 inches apart so they have room to spread.
6) Bake at 180deg for 10-15 minutes, until cookies are just golden brown at the edges. Cool on baking sheet for at least 1-2 minutes before transferring to a wire rack to cool completely.
