It's no surprise why I love yogurt in cakes - yogurt makes your cake extra delicious, moist, and smooth! Yum!
And this particular recipe was so so good! Of course if you want it a little less sweet, you may omit the syrup - the cake would still taste just as good.
Mixed Berries Yogurt Cake with Rose Syrup
Recipe adapted from Matthew Evans on SBS and modified by The Bakeanista
Ingredients
- 125g unsalted butter, softened
- 220g caster sugar
- 3 eggs
- ½ lemon, zested and juiced
- 200g self-raising flour
- 200g Rachel's Wild Strawberry & Rhubarb yogurt (or you could use Greek yoghurt)
- 120g mixed berries
Syrup (Optional)
- 40ml water
- 80g white sugar
- ½ lemon, juiced
- ½ tsp rose essence
Method
- Preheat oven to 180°C. Grease and line base and sides of a 20 cm round cake pan or 2 x medium loaf pan.
- Beat butter and caster sugar until pale and fluffy, then beat in eggs, one at a time; it may look a bit curdled, but don’t worry.
- Gently fold in lemon zest and flour, alternating with the yogurt in two folds.
- Using a spatula, scrape mixture into the prepared pan, making the centre a little lower than the edge.
- Scatter over mixed berries, then bake for 45 minutes or until golden brown and a skewer inserted into the center of the cake comes out clean.
- Meanwhile, to make syrup, stir 80ml water, white sugar and lemon juice in a small pan over low heat until sugar dissolves. Increase heat to medium and simmer for 5 minutes or until slightly thickened.
- Remove cake from oven, but leave in the pan. Using a fine skewer, pierce cake all over 30 times. Remove syrup from heat, then add rose essence. Spoon syrup over the cake so it soaks evenly. Cool, then serve.
I had two slices right out of the oven at 10pm. Oops! But it was too good to pass - a definite keeper in my books.
