月光河 (Moonlight Hor Fun)

This is one of the easiest dish to cook for dinner. I can whip this up in less than 30 minutes, which is a win for me, especially after a long day at work. Quick, easy and most importantly, tastes really good too! :D

My favourite hawker stall back in Malaysia serves one of the best moonlight hor fun, which I have always known simply as "fried kuey teow with telur mentah" - fried rice noodles with raw egg.

I learnt from food blog - 3 hungry tummies - that this dish is actually called the 月光河 which translates to moon lit river. The noodles are supposed to resemble the shimmering river while the egg yolk represents the brightly lit full moon.

The speciality of this poetic-named dish is to stir a raw egg into the fried rice noodles mixture while served in order to use the heat of the noodle dish to cook the raw egg.

Moonlight Hor Fun
Recipe adapted from 3 Hungry Tummies and modified by The Bakeanista

Serves 2:
500g of fresh rice noodles, mixed with 1 tbs of dark soy
2 tbsp pork lard
200g of sliced beef, marinated (see below)
100g of prawns
10 slices of fish cake
4 pieces of fish balls
2 stalks of broccoli
2 stalks of green spring onion, chopped
2 garlic cloves, chopped
3 ginger slices

Beef marinade:
dash of shao xing wine
dash of light soy sauce
a dash of black pepper
1 tsp of sugar
1 tsp of corn flour

Seasoning:
3 tbsp of oyster sauce
2 tbsp of light soy
3 tbsp of caramel sauce
1 tsp of sugar
white pepper to taste

Topping:
1 fresh egg

Method:
1) Loosen the rice noodles and mix in the dark soy. Heat wok and add in a little cooking oil, or pork lard if you have some. Add in the rice noodles and stir fry on high heat for a minute until charred. Remove noodles and set aside.

2) Heat pork lard until smokey then saute chopped garlic, ginger and spring onion for 30 seconds. Add in the marinated beef and sear for 30 seconds on high heat.

3) Add in the prawns and fry on high heat for a minute before throwing in the vegetables, fish balls and fish cake slices, continue to cook for a further minute.

3) Return the noodles to the wok, and add seasonings. Mix well, continue to fry on high heat for a minute. Check for seasonings.

4) Place noodles on a plate and place an egg yolk on top. Mix in the egg yolk and enjoy this delicious silky dish! ;)

By mixing the raw egg into the fried noodle, it gives the dish a smooth finish and ultra delicious taste.

My brother was rather disturbed by the idea of mixing raw egg into his fried beef rice noodles, he asked me to crack the egg in the wok before serving. But when he saw how silky my rice noodles were, he was convinced. He now eats my moonlight hor fun! :P
